2. I have paid to remove the advertsing (great, thank you) and so can I replace the PHPBB logo with a logo of our own? And how?
3. and the photo gallery feasture does not work - when trying to upload a picture/create a new topic (gallery) I receive an error message (i have removed the gallery feature awaiting a reply)
3a. what is the maximum size or recommended image size for gallery (pixels HxW) or file size?

Hi!
1) the text is in 'used on every page' - 'header' 2) sure you can replace that. You can upload your banner and place it in the templates everywhere you want. 3) please recreate the gallery so we can see the error messages.
